In the world of flowers, Myosotis is none other than the "Forget-me-not," a delicate blossom that the Clément family occasionally finds blooming in their vineyards come spring. This is the cuvée that best embodies the terroirs of Congy and Coizard-Joches, as no two harvests are ever the same, and it is through the support of reserve wines that the key to interpretation is found. The blend thus becomes the true hallmark of Clément & Fils since 1958. This cuvée is composed of 68% Pinot Meunier, 21% Chardonnay, and the remaining 11% Pinot Noir. Disgorged in December 2023, with a dosage of 0.5 g/L.

Three Senses
Just watching it pour into the glass is mesmerizing, thanks to its brightness and elegant perlage. Bringing it to your nose, it's impossible not to think of spring: delicate floral and fragrant notes intertwine with hints of dried fruit. On the palate, the bubbles are fine, with the minerality and acidity typical of Champagne. Its savoriness is also pleasantly noticeable.

Clément & Fils - Congy

Winery Clement & Fils

Founded at the beginning of the 20th century in Congy, the Clément family has historically had farming roots, always being closely connected to the land through livestock breeding, milk production, agriculture, and, of course, viticulture. Now in its fourth generation of Récoltant-Manipulant, today it is Aurélien who manages the 6.5 hectares of vineyards—5.5 of which are located in the Coteaux du Petit Morin in Congy and Coizard-Joches, and 1 hectare in Les Riceys in the south of the Aube. The winery preserves the unique know-how of Champagne production throughout the entire process. Aurélien carried out his first harvest in 2017. All stages of production are done entirely by hand: bottling, riddling, disgorging, and packaging. The soils, rich in clay and flint, form a thick layer over the bedrock, which is essential for the development of the vine's roots: chalk. Once expressed in the wines, the clay lends roundness and body to the texture, while the chalk brings out the distinctive minerality and savoriness that characterize Champagne.
