Der Blauwal Riserva is the pinnacle of Cesconi’s Classic Method sparkling wines: an elegant, structured Trento DOC Riserva made from 100% organic Chardonnay grapes grown in the Pressano hills, at altitudes between 500 and 550 meters.

The vines are trained with the traditional pergola system and planted on sandstone-rich soils that contribute precision and verticality to the wine. The gentle whole-cluster pressing allows for a low juice yield (max 55%) and great finesse. Fermentation takes place in used barriques, followed by 9 months of lees ageing without malolactic fermentation to preserve the wine’s freshness and tension.

After the second fermentation in the bottle, the wine undergoes a remarkable 84-month lees ageing, which develops deep complexity and an ultra-fine perlage. The Extra Brut dosage perfectly balances the wine’s mineral-driven and citrusy character.

Winery Cesconi

In the heart of Trentino, on the hills of Pressano, the Cesconi family has been cultivating vineyards and making wine since 1751 — combining artisanal care, deep respect for the land, and a forward-looking vision.

Today, the winery tends to around 10 hectares of vineyards spread between the Pressano hills (300–500 meters above sea level) and the Valle dei Laghi. These two distinct areas, with their unique microclimates and soils, give rise to wines of remarkable character and territorial expression.

On the ancient Triassic-era soils of Pressano — among the oldest in Italy — varieties such as Nosiola, Pinot Bianco, Pinot Grigio, Chardonnay, Sauvignon, and Lagrein are cultivated with sustainable practices, producing wines known for their finesse and elegance.

In the Valle dei Laghi, two main vineyards complete the picture: Prabi, with its sandy, alluvial-origin soils, is home to Manzoni Bianco; while Pivier, richer in clay and silt, is planted with Merlot and Cabernet Franc, yielding reds with depth and structure.

Cesconi represents a perfect harmony between tradition and innovation — crafting wines that are consistent, environmentally conscious, and uncompromising in quality.
