Sylvie Esmonin
Sylvie Esmonin graduated in Agronimic Engineering at the University of Montpellier and worked as an enologist for several wineries and in different locations until 1986 when, following the request of her father Michel, she took over the company reins, radically transforming the philosophy of the Domaine .
If in fact until then the grapes were sold to the Negoci, with the advent of Sylvie in charge, it was decided to make wine on their own and bottle directly the prorie labels. In 1989 the first bottling was made from the then 3 hectares of vineyard owned. In 1998 the father Michel retired and since then Sylvie has expanded the vine heritage up to the current 8 hectares: the vineyards are all very old, some planted grandfather's grandfather. In the vineyard a meticulous care of the health of the plant is practiced, the philosophy is to produce a natural wine by experimenting with biological / biodynamic practices without ever yielding to fundamentalist drifts.
In the cellar, the vinification includes a part of un-stemmed grapes (70% top range wines, 30% on intermediate wines and in the absence on the AOC Bourgogne) and the use of only indigenous yeasts. The use of barrels for aging includes containers used for Bourgogne AOC and Village wines while the 1er Crù are raised in new barrels for 80%. The wines have a style very similar to the personality of Sylvie Esmonin: one can well delineate a "feminine" physiognomy but at the same time energetic and determined; the use of new wood is very well dosed and allows not even to lose a thread of territorial adhesion of the wines.
