Cellar Ayala

 

Edmond de Ayala  founded the company Ayala in 1860. Stemming from a family  that has always had a look to the future, like his ancestors have always had high sense of taste for excellence, which prompted him to know in depth the winemaking process.Since the beginning, Edmond and his company became a landmark both in France and abroad. AYALA owes its rapid expansion largely to Fernand de Ayala, the younger brother of Edmond, who in 1863 settled in London, he comes into contact with the English aristocracy, and he introduces them to the culture for the French taste, he overcomes them with the vintage  wine made in 1865 which had a very low dosage at the time. Soon he conquers the place of the best brands of Champagne, enters the royal courts of England and Spain.

The magnitude of that period is also exemplified by the rich iconography that the firm inspired: the many posters advertising of that  time are some of the best examples of the art and brightness. Champagne AYALA has always been a small independent family-owned company, and in the past has been a less prosperous period, until, in 2005, the Bollinger family took over the company with the intention to restore it to its former glory. This date marks the beginning of a renaissance of the Champagne AYALA, with full restoration of winemaking facilities and the arrival of new staff. The House now employs about 15 people, keeping the family spirit of its origins.
