Cataldo Calabretta
At the fourth generation of winemakers, Cataldo Calabretta with her sisters have been working on a farm in organic farming, for 10 years now. Year after year the fruits of labor in the vineyard are seen, with a steady qualitative progression. The old family cellar has been restored but the old concrete tanks are still in use, being one of the most popular for Gaglioppo's processing. Renewed vineyards are located on hilly terrain in the heart of Ciro 'DOC.
Work in the vineyard is paramount. The Gaglioppo grows in the classic tree form, as before. The ground is fertilized with legumes and the only treatments are with powdered sulfur. The ripe grapes harvest is manually done in small cassettes. There follows a long maceration on the skins, with indigenous yeasts without activators and with low sulphite doses. Tartaric stabilization is carried on thanks to the cold, static, and before bottling there is a light filtration.
