Dhondt Grellet
The Dhondt-Grellet family has owned the vines for many years and respects the soil and fruit of the plants to transmit the fine and balanced juice, an expression of terroir, into the bottle. The very light calcareous soils of the grands and the premier crus of the cote de blancs (Cramant, Chouilly, Cuis), mix with the Chardonnay of Sezanne and the purest pinot Noir of the great valley of the marl. The average age of the vineyards is around 40 years and the optimal exposure to avoid overloading the wine too much. Fermentation is entrusted only to indigenous yeasts, naturally present on the grape skin, to read and reveal the true terroir.
